Red Potatoes

I planted red potatoes and I harvested them about a week ago. I ate a few and I found them to be dry.

I would like to know what I did wrong so next year I do not have the same problem?

Starch Makes Potatoes Dry

You don't say the name of your potato variety exactly or the size of the tubers. Every potato variety has its own texture and uses. That's why selecting the right seed potato variety to grow is quiet important.

Personally, I find Sweet Potatoes to be too dry. But we are writing about Solanum tuberosum here not Sweet Potatoes - which are an entirely different plant.

Red potatoes (Solanum) are described elsewhere as being of lower starch, high moisture, and good boiled as salad potatoes or roasted. So I'm surprised at your result.

High starch dryer potatoes, such as the Russets can be baked when they turn into a lovely fluffy mash. Many enjoy these with a little added butter.

Then there are the newer Russian potato varieties you might have seen. I haven't tried those yet.

It would be really handy to have some pictures of your potatoes, and know which variety you have grown.
